Instructions

  1. Grease: Thoroughly grease a 9×13 inch baking dish using butter or non-stick spray, then set it aside to prepare for the Rice Krispies mixture.
  2. Melt Butter: In a large microwave-safe bowl, melt the butter on high for 1 minute. If not fully melted, continue heating in 10-second increments until completely melted.
  3. Soften Marshmallows: Add the large marshmallows to the melted butter and microwave on high for 2 minutes. Watch carefully as the marshmallows puff up. If they need more time, heat in additional 10-second increments to avoid overheating or burning.
  4. Melt and Add Flavor: Stir in the ube extract and salt into the marshmallow mixture. Continue stirring until the marshmallows are fully melted and the mixture is smooth and evenly combined with the ube flavor.
  5. Mix in Cereal: Gradually add the Rice Krispies cereal, about 2 cups at a time, stirring gently to blend the cereal evenly without crushing it.
  6. Combine Mini Marshmallows: Fold in the mini marshmallows into the mixture until evenly distributed, adding extra chew and texture.
  7. Transfer and Press: Using slightly oiled hands for easy handling, transfer the mixture into the prepared baking dish. Spread it out evenly and gently press down to create a compact layer.
  8. Set and Slice: Allow the bars to set at room temperature for at least 1 hour to firm up before slicing into squares for serving.
