Instructions

  1. Prepare Cookie Cups: Preheat your oven to 350°F (175°C). Press portions of cookie dough into a greased muffin tin, shaping each to form a cup with a hollow center. Bake for 12-15 minutes or until golden brown and cooked through. Remove from oven and allow to cool completely.
  2. Make Mascarpone Filling: In a mixing bowl, combine softened mascarpone cheese, powdered sugar, vanilla extract, and cooled coffee. Mix gently until smooth and creamy. Fold in the whipped heavy cream carefully to maintain a light texture.
  3. Fill Cookie Cups: Once the cookie cups are fully cooled, spoon or pipe the mascarpone cream mixture into each cookie cup, filling generously.
  4. Dust with Cocoa: Using a fine sieve, sprinkle unsweetened cocoa powder over the filled cookie cups to finish. Chill briefly if desired before serving.
