Muffin Batter

- 50 ml Sunflower oil (¼ cup) (or canola oil)
- 113 g Unsalted butter (4 oz), room temperature
- 3 Large eggs
- 1 tsp Vanilla extract
- 270 g All-purpose flour (1¾ cups)
- 2 tsp Baking powder
- 1 pinch Salt

- Preheat oven: Preheat your oven to 220°C (425°F) to ensure it reaches the right temperature before baking the muffins.
- Create batter base: In a mixing bowl, whisk together the room temperature butter, sunflower oil, sugar, and vanilla extract until the mixture is smooth and creamy.
