4.7 from 22 reviews

A delightful and comforting dish featuring tender sweet potatoes and crisp apples cooked together with warm cinnamon and nutmeg, finished with a drizzle of pure maple syrup for a perfect balance of sweet and spice. Ideal as a side dish or a cozy fall treat.

Ingredients

Scale

Produce

  • 3 medium sweet potatoes, diced (about 3.5 cups)
  • 3 medium apples (Granny Smith preferred), diced (about 3.5 cups)

Spices & Sweeteners

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons pure maple syrup

Other

  • 1 tablespoon butter

Instructions

  1. Melt Butter: In a large frying pan over medium-high heat, melt 1 tablespoon of butter to prepare for cooking the vegetables and fruit.
  2. Cook Sweet Potatoes: Add the diced sweet potatoes to the pan. Stir frequently to cook evenly, allowing them to become almost tender over approximately 10 to 15 minutes.
  3. Add Apples and Spices: Stir in the diced apples, followed by 1 teaspoon of cinnamon and 1/4 teaspoon of ground nutmeg. Cover the pan with a lid to trap heat, and continue cooking, stirring often, until both the sweet potatoes and apples are fork tender, which should take another 5 to 10 minutes.
  4. Finish with Maple Syrup: Remove the lid and drizzle 3 tablespoons of pure maple syrup over the cooked mixture. Stir to combine all the flavors evenly. Serve warm as a savory-sweet side or dessert.

Notes

  • Choose tart apples like Granny Smith for a nice contrast to the sweet potatoes.
  • Adjust the maple syrup amount to taste, depending on desired sweetness.
  • For a vegan version, substitute butter with coconut oil or vegan margarine.
  • If you prefer softer apples, dice them smaller or cook a little longer.
  • This dish pairs well with roasted meats or as a standalone warm snack.
