Ingredients

Scale

Potatoes

  • 4 large russet potatoes

Protein

  • 1 pound steak, cubed
  • 1 pound shrimp, peeled and deveined

Vegetables & Toppings

  • 8 ounces mushrooms, sliced
  • 2 green onions, chopped

Dairy

  • 1 cup cheese, shredded
  • ½ cup sour cream

Other

  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the potatoes.
  2. Bake Potatoes: Wash and scrub the russet potatoes thoroughly. Prick each potato several times with a fork to allow steam to escape during baking. Place them directly on the oven rack and bake for 45-60 minutes until the potatoes are tender when pierced with a fork.
  3. Cook Steak: While the potatoes bake, heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the cubed steak and cook until browned on all sides and cooked to your preferred doneness. Remove steak from skillet and set aside.
  4. Cook Shrimp and Mushrooms: In the same skillet, add the peeled and deveined shrimp along with the sliced mushrooms. Cook until the shrimp turn pink and mushrooms are tender, about 4-5 minutes.
  5. Prepare Potatoes: Once the potatoes are baked and tender, carefully slice each potato open lengthwise. Fluff the inside using a fork and season with salt and pepper to taste for added flavor.
  6. Assemble Loaded Potatoes: Top each fluffed potato with cooked steak, shrimp, and mushrooms. Sprinkle shredded cheese generously over the top, followed by a dollop of sour cream.
  7. Garnish and Serve: Finish by garnishing each loaded potato with chopped green onions. Serve immediately while warm and enjoy a hearty, comforting meal.

Notes

  • For even cooking, choose potatoes of similar size.
  • Use high-quality steak cuts like sirloin or ribeye for best flavor.
  • Feel free to substitute cheddar cheese with your favorite melting cheese.
  • You can prepare toppings ahead of time and reheat before assembling.
  • Leftover loaded potatoes can be refrigerated and reheated in the oven.
