Ingredients

Scale

Dough Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp shortening
  • ¾ cups hot water

For Frying

  • 2 cups vegetable oil

For Dusting & Drizzling

  • ¼ cup confectioners sugar
  • 1 tsp ground cinnamon
  • 4 tbsp honey

Instructions

  1. Mix Dry Ingredients and Shortening: In a large bowl, combine the flour, salt, and baking powder. Add the shortening and use your hands to thoroughly integrate it with the flour until crumbly.
  2. Add Hot Water and Form Dough: Gradually pour the hot water into the flour mixture. Use your fingers to mix the water and dry ingredients until a dough forms.
  3. Knead the Dough: Transfer the dough to a clean surface and knead for about 4-5 minutes until smooth and elastic. Shape the dough into a ball and place it back in the bowl.
  4. Rest the Dough: Cover the dough with plastic wrap or a kitchen towel and let it rest for at least 20 minutes to allow gluten development, which aids in easier rolling and shaping.
  5. Divide the Dough: After resting, knead the dough briefly and reshape it into a ball. Flatten slightly and cut the dough into 4 equal pieces using a knife or pastry cutter.
  6. Heat the Oil: Pour vegetable oil into a large pot and heat over medium-low heat until it reaches 350ºF (175ºC), ideal for frying sopapillas.
  7. Roll Out Dough Pieces: Roll each dough piece into small balls. Place one ball on a working surface while keeping the others covered with plastic wrap. Roll the ball into a round disk about 6 inches in diameter and ⅛ to ¼ inch thick.
  8. Cut into Triangles and Fry: Cut the disk into 4 triangle-shaped pieces. Carefully place each triangle into hot oil, frying without overcrowding the pot. The dough will puff up quickly. Fry until bottoms are medium golden, then flip and cook the other side until light brown and crispy, about 4-5 minutes total.
  9. Drain and Repeat: Use a slotted spatula to remove the sopapillas from the oil and drain them on paper towels to absorb excess oil. Repeat the rolling and frying process with remaining dough.
  10. Serve: Dust sopapillas generously with confectioners sugar and ground cinnamon. Drizzle with honey or Piloncillo syrup before serving for a sweet finish.

Notes

  • Ensure the oil temperature remains steady at 350ºF for optimal puffing and crispiness.
  • Do not overcrowd the frying pot to avoid temperature drops and soggy sopapillas.
  • Using shortening instead of butter helps achieve a flakier texture.
  • Resting the dough is crucial for gluten development and easier handling.
  • Piloncillo syrup can be substituted with honey for authentic flavor variations.
  • Serve sopapillas warm for best taste and texture.
