Instructions

  1. Char the Corn: Heat a dry skillet or grill pan over medium-high heat and cook the ear of corn, turning occasionally, until the kernels are blackened and charred in spots, about 8-10 minutes. Remove from heat and let cool slightly. Slice the kernels off the cob and set aside.
  2. Sauté the Onion and Tomatoes: In a large pot over medium heat, add a small amount of oil and sauté the diced onion until translucent and fragrant, about 5 minutes. Add the quartered tomatoes and cook until softened, about 7-8 minutes.
  3. Add Stock and Chipotle Paste: Pour in the stock and stir in the chipotle paste. Bring the mixture to a simmer and let cook for 15 minutes to meld the flavors, stirring occasionally.
  4. Blend the Soup: Using an immersion blender or transferring carefully to a blender, blend the soup until smooth and creamy. Add the charred corn kernels and pulse a few times to incorporate but leave some texture.
  5. Final Seasoning and Serve: Taste and adjust seasoning with salt and pepper if needed. Reheat gently if necessary, then ladle into bowls and serve warm.
