Rub Ingredients
- 2 Tbsp. finely ground coffee beans or instant coffee
- 2 Tbsp. coarse salt
- 2 Tbsp. smoked paprika
- 2 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 1 Tbsp. cocoa powder
- 1 Tbsp. black pepper
- 1 tsp. sweet paprika
- 1 tsp. ground coriander
- 1 tsp. chili powder
- 1 tsp. ground ginger
Main Ingredients
- 2 Tbsp. olive oil
- 3 lbs. chuck roast
- 1 sweet onion, cut into 8 pieces
- 1 cup brewed coffee
- 1 cup beef broth
- 3 Tbsp. balsamic vinegar
- 3–4 sprigs fresh thyme
- Prepare the Rub. Combine the finely ground coffee, coarse salt, smoked paprika, garlic powder, onion powder, cocoa powder, black pepper, sweet paprika, ground coriander, chili powder, and ground ginger in a bowl. Mix thoroughly and store in an airtight container until ready to use.
- Season the Roast. Rub the chuck roast with olive oil to help the spices adhere, then generously coat all sides with the prepared coffee rub, ensuring an even cover.
- Arrange Ingredients in Slow Cooker. Place the cut sweet onion pieces at the bottom of the slow cooker. Lay the seasoned roast on top of the onions to help flavor the meat and keep it elevated.
- Add Liquids Carefully. Pour brewed coffee, beef broth, and balsamic vinegar around the sides of the roast in the slow cooker, taking care not to pour directly onto the meat to avoid washing away the rub.
