Ingredients

Scale

Meat and Vegetables

  • 2 pounds lean ground beef (or turkey)
  • 2 cups diced green bell peppers – fresh or frozen
  • 1 cup diced onion – fresh or frozen
  • 1 tablespoon minced garlic

Seasoning and Thickening

  • 1 tablespoon brown sugar
  • 2 teaspoons salt
  • 3 tablespoon flour
  • ½ teaspoons cayenne pepper
  • ½ teaspoons chili powder

Liquids and Sauces

  • 1 cup beef broth – or beef stock
  • 1 cup ketchup
  • 1 tablespoon dijon mustard
  • 1 teaspoon Worcestershire sauce

Cheese

  • 2 cups shredded cheese – Cheddar, or blended cheese of choice

Instructions

  1. Prepare and Cook Meat Mixture: In a large pot or pan, combine the ground beef, green bell peppers, onion, garlic, flour, brown sugar, and salt. Cook over medium heat, stirring regularly for about 15 minutes until the meat is browned and the onions turn translucent.
  2. Add Liquids and Spices: Stir in the beef broth, ketchup, dijon mustard, Worcestershire sauce, cayenne pepper, and chili powder into the meat mixture.
  3. Simmer the Mixture: Reduce heat to medium and let the mixture simmer for 45 minutes. Stir occasionally as the moisture cooks out and the mixture thickens into a Sloppy Joe style consistency.
  4. Melt Cheese in Mixture: Add 1 cup of shredded cheese to the pan and stir until fully melted and incorporated into the mixture.
  5. Broil for Cheese Topping: If desired, transfer the meat mixture to an oven-safe dish. Sprinkle the remaining 1 cup of cheese over the center and place under the oven broiler for a few minutes until the cheese is bubbly and browned. Watch carefully to prevent burning.
  6. Serve: Serve the dip hot with baked baguette slices or Fritos for dipping.

Notes

  • You can substitute ground turkey for beef for a leaner option.
  • Adjust the cayenne pepper and chili powder to taste for more or less heat.
  • For best results, use freshly shredded cheese rather than pre-shredded for better melting.
  • Watch the broiler closely as cheese browning can happen quickly.
  • Serve immediately to enjoy the dip warm and gooey.
