Instructions

  1. Cook the shrimp: Heat the olive oil in a large skillet over medium heat. Add the shrimp and sauté until they turn pink and are cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  2. Brown the sausage: In the same skillet, add the ground pork sausage. Cook until browned, breaking it up with a spoon as it cooks to ensure even browning.
  3. Sauté the vegetables: Add the diced onion, green bell pepper, and celery to the skillet with the cooked sausage. Cook for about 5 minutes until the vegetables soften and become aromatic.
  4. Add garlic and spices: Stir in the minced garlic, Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute to toast the spices and enhance their flavor.
  5. Toast the rice: Add the long grain white rice to the skillet and stir to combine with the vegetable and spice mixture. Toast the rice for 1-2 minutes until it becomes lightly golden.
  6. Simmer the rice: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer gently for 18-20 minutes or until the rice is fully cooked and liquid is absorbed.
  7. Combine and finish: Once the rice is cooked, stir in the reserved cooked shrimp and chopped fresh parsley. Adjust seasoning with additional salt and pepper if needed.
  8. Serve: Serve the shrimp dirty rice hot, with optional hot sauce on the side for added heat according to preference.
