Ingredients

Scale

Vegetables & Fruits

  • 1 large onion, thinly sliced
  • 4 oz baby bella mushrooms, sliced
  • 1 ½ Granny Smith apples, cubed
  • 2 tbsp minced chives

Dairy

  • 2 tbsp unsalted butter
  • 1 ½ oz grated Gruyère cheese
  • 1 egg, beaten

Pantry & Spices

  • 2 tbsp vegetable oil
  • 1 tsp granulated sugar
  • ½ tsp dried thyme
  • 1 lb puff pastry, thawed

Instructions

  1. Caramelize the onions: Heat vegetable oil in a skillet over medium-low heat. Add sliced onion and cook slowly for 20-30 minutes, stirring occasionally, until they become tender and golden brown. Remove from heat and set aside.
  2. Sauté mushrooms and apples: In the same skillet, melt the unsalted butter over medium heat. Add sliced mushrooms and cook for 5-7 minutes until browned. Stir in the cubed Granny Smith apples and granulated sugar, cooking for another 5-8 minutes until apples are tender but still hold their shape. Combine with the caramelized onions in a mixing bowl.
  3. Assemble filling: To the bowl containing the caramelized onions, mushrooms, and apples, add grated Gruyère cheese, minced chives, and dried thyme. Gently mix all ingredients together until evenly distributed for a flavorful filling.
  4. Prepare puff pastry: On a lightly floured surface, unroll the thawed puff pastry sheet. Using a sharp knife or pastry cutter, cut the pastry into approximately 2-inch squares or rectangles. Place about a tablespoon of the prepared filling onto the center of each pastry piece, leaving a border around the edges.
  5. Shape and bake: Bring the edges of each pastry square up and pinch them together at the center to form a neat parcel. Arrange the parcels on a baking sheet lined with parchment paper. Preheat the oven to 400°F (200°C). Brush each pastry parcel generously with beaten egg wash to achieve a golden glaze. Bake for 15-20 minutes until the pastry is puffed, flaky, and golden brown. Remove from oven and allow to cool slightly before serving.

Notes

  • Caramelizing onions requires patience; cooking them low and slow prevents burning and develops deep sweetness.
  • Ensure apples remain slightly firm for texture contrast; avoid overcooking to prevent mushiness.
  • Use cold puff pastry for easier handling and better puff during baking.
  • Egg wash helps achieve an appealing golden color and glossy finish on the pastry.
  • These bites can be prepared ahead of time and baked just before serving for convenience.
