Ingredients

Scale

Mushrooms

  • 6 large portobello or cremini mushrooms

Beef Mixture

  • 1/2 lb ground beef
  • 1 medium yellow onion, finely chopped
  • 3 cloves fresh garlic, minced
  • Stems from mushrooms, finely chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Cheese

  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed mushrooms later.
  2. Prepare Mushrooms: Clean the mushrooms gently with a damp cloth and remove their stems. Set the mushroom caps aside and finely chop the stems for the filling.
  3. Sauté Aromatics and Stems: Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic and sauté until soft and fragrant, about 3-4 minutes. Then add the chopped mushroom stems and continue cooking for another 2 minutes to soften.
  4. Cook Ground Beef: Increase heat to medium-high and add the ground beef to the skillet. Break apart with a spatula and cook until browned and fully cooked, around 5-7 minutes. Drain any excess fat if needed.
  5. Add Spices: Stir in smoked paprika, cumin, and black pepper into the beef mixture, blending well. Optionally, cooked grains or lentils can be mixed in here for additional texture.
  6. Incorporate Cheese: Remove the skillet from heat and stir in half of the shredded cheddar cheese until it melts evenly into the mixture.
  7. Stuff Mushrooms: Place mushroom caps upside down on a baking sheet. Spoon the beef and cheese mixture generously into each cap, mounding slightly on top.
  8. Top with Cheese: Sprinkle the remaining cheddar cheese over the stuffed mushrooms for a golden, cheesy crust.
  9. Bake: Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and browned.
  10. Serve: Remove from oven and allow to cool slightly before serving to enjoy the savory flavors.

Notes

  • Use portobello mushrooms for larger, meatier caps or cremini for smaller, more bite-sized mushrooms.
  • If preferred, turkey or plant-based ground meat can substitute ground beef.
  • Adding cooked grains like quinoa or lentils to the beef mixture can increase fiber and texture.
  • Adjust seasoning to taste, especially the smoked paprika for smoky depth.
  • For a spicier kick, add chili powder or cayenne pepper to the spice mix.
  • Make sure to drain excess fat from beef after cooking to avoid soggy mushrooms.
  • Serve with a fresh green salad or roasted vegetables for a balanced meal.
