  • 1 1/2 cups shredded coconut
  • 3 cups milk chocolate chips

Instructions

  1. Prepare the marshmallow base: Melt the butter in a large saucepan over medium heat. Add the mini marshmallows and stir continuously until they are completely melted and smooth.
  2. Incorporate the cereal: Remove from heat and immediately stir in the Caramel Crunch cereal until all pieces are evenly coated with the marshmallow mixture.
  3. Form the treat base: Transfer the sticky cereal mixture into a greased 9×13 inch pan. Press down firmly and evenly with a spatula or your hands (lightly greased) to create a compact layer. Allow to cool slightly.
  4. Make the caramel topping: In a medium saucepan, combine the caramels and heavy whipping cream over medium heat. Stir constantly until the caramels have melted and the mixture is smooth and creamy.
  5. Toast the coconut: Spread shredded coconut evenly on a baking tray and toast in a preheated oven at 350°F (175°C) for about 10 minutes, stirring periodically to avoid burning. The coconut should be golden brown and fragrant.
  6. Combine caramel and coconut: Stir the toasted coconut into the melted caramel mixture until well combined. Pour this caramel coconut layer evenly over the pressed Rice Krispie base in the pan.
  7. Melt the chocolate: Place the milk chocolate chips in a microwave-safe bowl and heat in 30-second increments, stirring after each interval until fully melted and smooth (approximately 90 seconds total).
  8. Slice the treats: Once the caramel layer is set but still slightly warm, slice the Rice Krispie treats into desired pieces and carefully remove them from the pan.
  9. Dip and drizzle chocolate: Dip the bottom of each treat piece into the melted chocolate, allowing any excess to drip off. Place the dipped pieces on parchment paper.
