Roasted Garlic

  • 3 heads garlic
  • 1 teaspoon olive oil

Dip Mixture

  • 1 8 oz cream cheese, softened
  • 1.5 cups mozzarella cheese, hand shredded (reserve ½ cup for topping)
  • ½ cup parmesan cheese
  • ¼ cup fresh parsley, chopped (plus extra for garnish)
  • ¼ cup mayonnaise
  • 12 tablespoons garlic powder
  • salt and pepper to taste

Instructions

  1. Roast the Garlic: Cut off the tops of the garlic heads to expose the cloves. Place the garlic heads in the center of a large piece of aluminum foil. Drizzle with olive oil and season lightly with salt and pepper. Loosely wrap the foil around the garlic heads and place them in a preheated oven at 375°F (190°C) for 1 hour. Once roasted, allow the garlic to cool slightly and then squeeze out the soft, roasted garlic cloves from the heads.
  2. Prepare the Dip Mixture: In a medium-sized bowl, combine the softened cream cheese, roasted garlic cloves, 1 cup shredded mozzarella cheese (reserve ½ cup for topping), parmesan cheese, mayonnaise, garlic powder, chopped parsley, salt, and pepper. Stir thoroughly until all ingredients are evenly combined.
  3. Assemble the Dip: Transfer the mixture to a baking dish and spread it evenly. Sprinkle the reserved ½ cup shredded mozzarella cheese over the top to create a cheesy crust.
  4. Bake the Dip: Bake the dip uncovered in the oven at 375°F (190°C) until the cheese is melted and the edges are hot and bubbly, approximately 20-25 minutes.
  5. Garnish and Serve: Once baked, remove the dip from the oven and let it cool slightly. Garnish with additional chopped fresh parsley. Serve warm with chips, crackers, or toasted bread for dipping and enjoy.
