Instructions

  1. Prepare the Baking Sheet: Line a large baking sheet with parchment paper or wax paper to prevent the cookies from sticking after dipping in chocolate.
  2. Make Sandwich Cookies: Place 24 Ritz crackers on the lined baking sheet spaced apart. Spoon about 1/2 tablespoon of creamy peanut butter onto the center of each cracker. Gently press another cracker on top to create a sandwich. Repeat with the remaining crackers to form all the sandwiches.
  3. Melt the Chocolate: In a large microwave-safe bowl, combine the chocolate chips and coconut oil if using. Microwave in 30-second bursts, stirring well between each burst, until the chocolate is fully melted and smooth. Alternatively, melt using a double boiler to avoid overheating.
  4. Dip the Sandwiches: Using two forks, carefully drop each peanut butter sandwich into the melted chocolate, turning it to coat completely. Lift the coated sandwich with one fork, tapping gently on the bowl’s edge to remove excess chocolate.
