Ingredients

Scale

Brownie Batter

  • 60 g butter
  • 150 g granulated sugar
  • 75 g dark brown sugar
  • 125 g dark chocolate
  • 1 tbsp syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 100 g flour
  • 20 g cocoa powder
  • 1 tsp baking powder
  • 100 g hazelnuts

Decorations

  • sugar eyes
  • red M&M’s
  • pretzels
  • 30 g milk chocolate (for melting)

Instructions

  1. Melt Ingredients: In a saucepan over low heat, melt the butter together with both sugars, dark chocolate, and syrup, stirring continuously until all ingredients are combined smoothly. Remove from heat and allow the mixture to cool slightly.
  2. Beat Eggs and Vanilla: In a mixing bowl, beat the eggs and vanilla extract until the mixture is fluffy and light, which helps to aerate the batter.
  3. Combine Mixtures: Gradually add the cooled chocolate mixture to the beaten eggs and mix on low speed until the batter becomes smooth and uniform.
  4. Add Dry Ingredients: Sift together the flour, cocoa powder, and baking powder, then add them to the wet mixture. Mix on low speed until just incorporated to avoid overmixing. Gently fold in the hazelnuts to distribute evenly.
  5. Prepare for Baking: Line a 20×20 cm baking pan with parchment paper. Pour the brownie batter into the pan and spread it evenly for an even bake.
  6. Bake: Place the pan in a preheated oven at 190 °C (374 °F) and bake for 25 minutes. The top should be dry but the inside still soft and fudgy. Remove from the oven and cool completely in the pan before cutting into 12 equal pieces.
  7. Melt Milk Chocolate: Gently melt the milk chocolate using a double boiler or microwave in short bursts, stirring until smooth.
  8. Decorate Brownies: Use the melted chocolate as glue to attach sugar eyes, red M&M’s as noses, and pretzels as antlers on each brownie to create playful reindeer faces.

Notes

  • Ensure not to overbake to keep the brownies moist and fudgy inside.
  • Allow brownies to cool completely before decorating to prevent melting decorations.
  • Hazelnuts can be lightly toasted for added flavor before folding into the batter.
  • Use a sharp knife to cut brownies into even squares for a neat presentation.
