Cheesecake Batter
- 24 oz (3 packages) cream cheese, softened
- 2 tbsp cocoa powder
- 1 cup granulated sugar
- 3 large eggs
- 1 tbsp red food coloring
- 1 tsp vanilla extract
- 1/2 tsp salt
- Prepare the batter: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar and continue beating until well combined. Mix in the cocoa powder, red food coloring, vanilla extract, and salt until evenly distributed. Add the eggs one at a time, beating on low speed after each addition just until blended to avoid overmixing.
- Bake the cheesecake: Preheat your oven to 325°F (163°C). Pour the prepared batter into a greased 9-inch springform pan lined with parchment paper for easier removal. Bake in the preheated oven for approximately 50 to 60 minutes, or until the edges are set and the center is just slightly jiggly but not liquid.
