Rainbow Fruit Lollies are a refreshing and healthy frozen treat made by layering colorful mixed fruits with fruit juice in molds and freezing them. Perfect for a hot day, these lollies are naturally sweet, nutritious, and easy to make at home with minimal ingredients.

Ingredients

Scale

Fruits

  • 1 cup mixed fruit (such as strawberries, kiwi, mango, blueberries, and pineapple), diced

Liquid

  • 1 to 1 1/2 cups fruit juice (such as orange juice, apple juice, or a blend)

Instructions

  1. Prepare the Fruit: Wash and dice a variety of colorful fruits into small bite-sized pieces to ensure even layering and easy freezing.
  2. Layer the Fruit: Place a small layer of mixed fruit pieces into the bottom of each pop mold, distributing colors evenly for a vibrant effect.
  3. Add Fruit Juice: Pour a small amount of fruit juice over the fruit layer to help bind the ingredients and enhance flavor.
  4. Repeat Layers: Continue layering fruit and juice alternately until the molds are filled, leaving a little space at the top for expansion during freezing.
  5. Insert Sticks and Freeze: Place the lids and sticks onto the molds securely and transfer them to the freezer. Freeze for at least 4 to 6 hours or until completely solid.
  6. Unmold and Serve: To release the lollies, briefly run warm water over the outside of the molds and gently pull out the frozen fruit lollies. Enjoy immediately.

Notes

  • Use fresh, ripe fruits for the best flavor and texture.
  • You can use 100% natural fruit juice with no added sugar to keep the lollies healthy.
  • Feel free to experiment with different fruit combinations based on seasonal availability.
  • If the fruit juice is too sweet, dilute with a little water to balance the flavor.
  • The lollies can be stored in an airtight container in the freezer for up to 2 weeks for optimal freshness.
