For the Meatloaf:

  • 2 pounds ground beef
  • 1 cup breadcrumbs

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the meatloaf.
  2. Sauté Vegetables: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced green bell pepper and onion, sautéing them for approximately 5 minutes until they become soft and fragrant. Set aside to cool slightly.
  3. Mix Meatloaf Ingredients: In a large mixing bowl, combine 2 pounds of ground beef with 1 cup breadcrumbs, 1 egg, ½ cup milk, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon salt, and ½ teaspoon black pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Assemble Base Layer: Press half of the meat mixture evenly into the bottom of a loaf pan, creating a solid base layer.
  5. Add Filling Layers: Layer 4 slices of provolone cheese evenly over the meat base, then spread the sautéed peppers and onions over the cheese layer.
  6. Top Meat Layer: Cover the filling with the remaining meat mixture, pressing down gently to seal the edges and enclose the filling completely.
  7. Bake Meatloaf: Place the loaf pan in the preheated oven and bake for 45-50 minutes. About 5 minutes before the cooking time ends, remove the pan and place the remaining 4 slices of provolone cheese on top of the meatloaf. Return to the oven and bake until the cheese has melted.
