For the Meatloaf:
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Cheesesteak Filling:
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 tablespoon olive oil
- 8 slices provolone cheese (4 for filling, 4 for topping)
Optional Garnish:
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the meatloaf.
- Sauté Vegetables: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced green bell pepper and onion, sautéing them for approximately 5 minutes until they become soft and fragrant. Set aside to cool slightly.
- Mix Meatloaf Ingredients: In a large mixing bowl, combine 2 pounds of ground beef with 1 cup breadcrumbs, 1 egg, ½ cup milk, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon salt, and ½ teaspoon black pepper. Mix thoroughly until all ingredients are well incorporated.
- Assemble Base Layer: Press half of the meat mixture evenly into the bottom of a loaf pan, creating a solid base layer.
- Add Filling Layers: Layer 4 slices of provolone cheese evenly over the meat base, then spread the sautéed peppers and onions over the cheese layer.
- Top Meat Layer: Cover the filling with the remaining meat mixture, pressing down gently to seal the edges and enclose the filling completely.
- Bake Meatloaf: Place the loaf pan in the preheated oven and bake for 45-50 minutes. About 5 minutes before the cooking time ends, remove the pan and place the remaining 4 slices of provolone cheese on top of the meatloaf. Return to the oven and bake until the cheese has melted.
- Rest and Serve: Remove the meatloaf from the oven and let it rest for 5-10 minutes to allow juices to redistribute. Garnish with chopped fresh parsley if desired, then slice and serve.
Notes
- If you prefer, you can substitute ground beef with ground turkey or a beef-pork mix for variation.
- Using fresh parsley garnish adds a nice color contrast and fresh flavor.
- Allowing the meatloaf to rest before slicing helps keep it moist and easier to cut.
- For a gluten-free version, use gluten-free breadcrumbs.
