Noodles

  • 8.8 ounce box of rice noodles (also known as Pad Thai noodles)

Peanut Sauce

  • ½ cup water
  • ¼ cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1½ tablespoons fresh lime juice (about 1 lime)
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon grated fresh garlic (2 large cloves)
  • 12 teaspoons sriracha sauce

Garnishes

  • 1 teaspoon sesame seeds
  • 12 tablespoons scallions, thinly sliced
  • 12 tablespoons lightly salted peanuts, chopped

Instructions

  1. Cook the Noodles: Bring a large pot of water to a boil and cook the rice noodles according to the package directions, usually about 5 to 7 minutes, until tender but still slightly chewy. Drain the noodles and reserve some of the cooking water.
  2. Prepare the Peanut Sauce: While the noodles are cooking, combine the creamy peanut butter, water, low-sodium soy sauce, brown sugar, fresh lime juice, toasted sesame oil, grated garlic, and sriracha in a medium bowl. Whisk until smooth and creamy. If the sauce is too thick, thin it with a little reserved noodle cooking water.
  3. Toss Noodles with Sauce: Place the drained hot noodles in a large mixing bowl and pour the peanut sauce over them. Toss thoroughly to coat the noodles evenly with the sauce.
  4. Garnish and Serve: Transfer the coated noodles to serving bowls or plates and sprinkle with sesame seeds, thinly sliced scallions, and chopped peanuts. Serve immediately while the noodles are warm.
