Ingredients

Scale

Dry Ingredients

  • 2 cups old fashioned oats
  • 1 tsp cinnamon
  • 3/4 cup pecans, chopped (optional)

Wet Ingredients

  • 2.5 cups milk or dairy-free almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 tbsp butter, softened

Fruit

  • 1 can peaches (15 oz drained) or 2 fresh peaches, chopped into bite sized pieces

Instructions

  1. Prepare the Dish: Preheat your oven to 350°F (175°C). Spray the inside of a casserole dish with non-stick cooking spray to ensure easy removal after baking.
  2. Combine Dry Ingredients: In the casserole dish, pour in the old fashioned oats. Add the cinnamon, softened butter, and chopped pecans if using. Mix gently to distribute ingredients evenly.
  3. Add Wet Ingredients and Fruit: Pour in the maple syrup, vanilla extract, and almond extract over the oat mixture. Stir to combine. Gently fold in the chopped peaches to keep their shape. Finally, pour in the milk, mixing everything together thoroughly but gently.
  4. Bake: Place the casserole dish in the preheated oven and bake for about 35 minutes or until the oatmeal is set in the middle and slightly golden on top.
  5. Serve: Remove from the oven and let it cool slightly. Serve warm, optionally topped with whipped cream or a dairy-free alternative for extra richness.

Notes

  • If using fresh peaches, ensure they are ripe and juicy for the best flavor.
  • Maple syrup can be substituted with honey or agave nectar if preferred.
  • Butter can be replaced with coconut oil or vegan margarine to make the dish dairy-free.
  • Pecans can be omitted or substituted with walnuts or almonds based on preference.
  • Store leftovers covered in the refrigerator for up to 3 days; reheat before serving.
