Noodle Rolls

  • 8 rice paper sheets

  • 1 block firm tofu (or 8 cooked shrimp)
  • 2 tablespoons green onion, sliced
  • 2 teaspoons grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine (or rice vinegar)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon sugar
  • Oil spray for air frying

  • Sweet chili sauce

Instructions

  1. Soften Rice Paper: Soak one rice paper sheet in warm water for 10–15 seconds until it becomes soft and pliable, making it easy to roll without tearing.
  2. Prepare Surface: Transfer the softened sheet to a damp surface such as a wooden board or clean kitchen towel to prevent sticking.
  3. Add Filling: Place a small layer of cooked vermicelli noodles, followed by shredded carrots, chopped cabbage, and your choice of tofu or cooked shrimp in the center of the sheet.
  4. Roll the Sheet: Fold in the sides of the rice paper and roll it tightly from the bottom upward like a burrito, ensuring the filling is securely wrapped. Repeat this process for all remaining sheets.
  5. Oil the Rolls: Lightly brush or spray each assembled roll with sesame oil or a neutral oil to aid in crisping during air frying.
  6. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 2–3 minutes to ensure even cooking.
  7. Arrange Rolls: Place the rolls seam-side down in the air fryer basket in a single layer without overcrowding to allow proper airflow.
  8. Air Fry: Cook the rolls for 8–10 minutes, flipping them halfway through the cooking time, until they turn golden brown and crispy on all sides.
  9. Serve: Serve the crispy noodle rolls hot with your choice of dipping sauce such as sweet chili, peanut, or soy-ginger sauce for a flavorful finish.
