Bread
- 150g unsalted butter, softened, plus extra for the tin
- 90g caster sugar
- 2 large eggs, beaten
- 150g self-raising flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 2 ripe bananas (200g), peeled and mashed
- 150g mincemeat (ensure it’s vegetarian, if needed)
Whipped Butter
- 100g salted butter, softened
- 2 tbsp honey
- 2 tsp ground cinnamon
- Prepare the Tin: Heat the oven to 180°C (160°C fan)/gas mark 4. Butter a 900g loaf tin thoroughly and line the base and sides with baking parchment. Set aside to ensure the mixture doesn’t stick during baking.
- Mix Butter and Sugar: Using an electric whisk, beat the softened unsalted butter and caster sugar together until the mixture becomes light and fluffy, creating a creamy base for the batter.
- Add Eggs and Flour: Gradually whisk in the beaten eggs, allowing the mixture to combine smoothly. Then add half of the self-raising flour, mixing gently. Fold in the remaining flour along with the baking powder to keep the batter airy.
- Incorporate Flavors: Fold the mixed spice, mashed bananas, and mincemeat into the batter carefully to maintain the batter’s texture and distribute the flavors evenly.
- Bake the Bread: Pour the prepared batter into the lined loaf tin. Bake in the preheated oven for 1 hour, checking doneness by inserting a skewer into the center — it should come out clean. If the top browns too quickly, cover loosely with foil to prevent burning.
- Cool the Bread: Once baked, allow the banana bread to cool in the tin for 10 minutes to settle. Then transfer it onto a wire rack to cool completely before slicing.
- Prepare the Whipped Butter: Beat the softened salted butter, honey, and ground cinnamon together with an electric whisk until the mixture is pale and fluffy, perfect for spreading.
- Serve: Optionally, toast slices of the banana bread and spread with the cinnamon honey butter while warm for enhanced flavor. Store the bread in an airtight container for up to three days, and keep the whipped butter refrigerated for up to five days.
Notes
- Use vegetarian mincemeat to keep the recipe suitable for vegetarian diets.
- If the bread browns too quickly during baking, cover the top loosely with foil.
- For an added twist, mix some salted caramel sauce into the whipped butter for a sweet and salty flavor.
- Ensure the bananas are ripe for maximum sweetness and moisture in the bread.
- Store both the bread and butter properly to maintain freshness and taste.
