Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
  2. Sauté vegetables: In a pan over medium heat, melt the butter and sauté the diced onion and red bell pepper until they become soft and fragrant, about 5 minutes.
  3. Mix base ingredients: In a large bowl, combine the thawed hashbrowns, cooked sausage, sautéed onions and peppers, green onions, salt, pepper, pressed garlic, and cream cheese. Mix thoroughly to ensure even distribution. Spread this mixture evenly into a greased 9×13 inch casserole dish. Sprinkle the cooked sausage over the top.
  4. Prepare egg mixture and assemble: In a separate bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth. Pour this mixture evenly over the hashbrown base in the casserole dish. Then sprinkle shredded cheddar cheese on top.
  5. Bake and finish: Bake the casserole uncovered for 35 minutes in the preheated oven. Remove from oven and evenly scatter the crumbled bacon on top. Return the casserole to the oven and bake for an additional 10-20 minutes, or until the center springs back when lightly pressed.
