Chocolate Mixture
- ¼ cup semi-sweet chocolate chips
- ½ cup salted caramel chips (Hershey brand recommended)
- 2 tablespoons butter (unsalted or salted, not margarine)
Mix-ins
- 2 cups mini marshmallows
- 2 cups rice krispy cereal
- Melt Ingredients: Place semi-sweet chocolate chips, salted caramel chips, and butter into a medium microwave-safe bowl. Microwave at 50% power for 1 minute. Stir well, then continue microwaving in 30-second intervals at 50% power until fully melted, typically around 2 minutes total. Stir mixture until mostly smooth with some lumps allowed.
- Add Marshmallows: Without stirring, add the mini marshmallows to the melted mixture. Microwave for an additional 1 minute.
- Mix Thoroughly: Stir the chocolate and marshmallow mixture until smooth. Some marshmallows may remain partially unmelted, which is fine. Then fold in the rice krispy cereal gently until fully coated. Let the mixture cool for a few minutes.
- Form Cookies: When the mixture is warm enough to handle but not too hot, spray your hands with nonstick cooking spray. Scoop ¼ cup portions of the mixture, roll them into balls, and flatten into discs. Avoid pressing too firmly to keep the cookies from becoming too hard.
- Set and Serve: Place the formed cookies on parchment paper and allow them to cool and harden. Alternatively, press the mixture into a loaf pan to make bars if preferred. Once set, enjoy your Homemade Star Crunch Cookies.
Notes
- If using a different brand of caramel chips other than Hershey’s, check the melting instructions as some might behave differently, potentially affecting texture.
- Use butter for best flavor and texture; margarine is not recommended.
- Nonstick cooking spray on your hands prevents sticking and makes shaping easier.
- Do not over-press cookies when forming to maintain a chewy texture rather than hard.
