Instructions

  1. Prepare the Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions. While still warm, season with rice vinegar, sugar, and salt, and gently fold to combine. Allow the rice to cool to room temperature.
  2. Prepare the Fillings: Slice the cucumber and avocado into thin strips. Set aside along with the cooked shrimp or crab meat.
  3. Assemble the Roll: Cover a bamboo sushi mat with plastic wrap to prevent sticking. Place one sheet of nori shiny side down on the mat. Wet your hands with water to prevent rice from sticking and spread about 1 cup of the prepared sushi rice evenly over two-thirds of the nori sheet.
