Vegetable Mash
- 1 ½ cups russet potatoes (peeled and chopped)
- 1 ½ cups cauliflower florets
- ½ cup grated parmesan cheese
- 1 tablespoon olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- ½ cup chicken broth (low or no salt)
Ground Turkey Filling
- 1 tablespoon olive oil
- 1 lb ground turkey
- 1 cup diced onion
- 1 tablespoon minced garlic (about 2 garlic cloves)
- ½ cup diced carrots
- ¼ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried rosemary
- ½ teaspoon dried thyme
- ½ cup low sodium chicken stock
- 1 tablespoon tomato paste
- 1 cup peas
- 1 cup corn
- Prepare oven and dish: Preheat your oven to 350°F (175°C) and grease an 8×8 inch casserole dish (a 9×13 inch dish also works).
- Cook potatoes and cauliflower: Bring a large pot of water to a boil on the stove. Add the peeled and chopped potatoes along with the cauliflower florets and boil for about 10 minutes until both are soft and tender.
- Cook ground turkey and vegetables: While the potatoes and cauliflower cook, heat 1 tablespoon olive oil in a pan over medium heat. Brown the ground turkey for about 5 minutes. Then add diced onions, minced garlic, and diced carrots, cooking for another 5 minutes until the turkey is fully cooked and vegetables are softened.
- Add seasoning and liquids to turkey mixture: Stir in salt, pepper, dried rosemary, dried thyme, chicken broth, tomato paste, and frozen peas and corn into the turkey-vegetable mixture. Mix well to combine and let simmer briefly to meld flavors.
- Drain and mash vegetables: Drain the cooked potatoes and cauliflower thoroughly. In a large mixing bowl, mash them together with olive oil, garlic powder, black pepper, salt, chicken broth, and grated parmesan cheese. Use a stand mixer or hand mixer for smooth, creamy texture.
- Assemble the casserole: Layer the turkey and vegetable filling in the greased casserole dish. Spread the cauliflower and potato mash evenly on top using a spatula and smooth out the surface.
- Bake the shepherd’s pie: Place the casserole in the preheated oven and bake for 30 minutes, or until the topping is golden brown and the filling is bubbly.
