Ingredients

Scale

Wet Ingredients

  • 1/2 cup plain Greek yogurt
  • 1/3 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup oat flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

Add-ins

  • 1/4 cup chocolate chips

Instructions

  1. Prep Your Pan: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well, ideally with coconut oil spray to prevent sticking without leaving any off-flavors.
  2. Mix the Wet Ingredients: In a mixing bowl, whisk together the Greek yogurt, creamy peanut butter, honey or maple syrup, egg, and vanilla extract until the mixture is completely smooth with no peanut butter streaks. Using room temperature ingredients will help achieve a smooth blend.
  3. Add the Dry Ingredients: Gently fold in the oat flour, baking powder, and a pinch of salt until just combined. Avoid overmixing to keep the muffins tender. Then, carefully fold in the chocolate chips.
  4. Bake to Perfection: Fill each muffin cup about three-quarters full with the batter. Bake for 18 to 22 minutes until the tops turn golden and a toothpick inserted in the center comes out with a few moist crumbs. Start checking at 18 minutes to prevent overbaking.

Notes

  • Use plain Greek yogurt to avoid extra sugar that can unbalance the flavors.
  • Creamy peanut butter works best for a smooth muffin texture.
  • If you can’t find oat flour, pulse old-fashioned oats in a blender until powdery as a substitute.
  • Room temperature ingredients mix easier, especially the peanut butter.
  • Do not overmix the batter to avoid tough muffins.
  • Check muffins early as oat flour tends to bake faster than regular flour.
