Ingredients

Scale

Meat and Vegetables

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced

Dairy

  • 1 cup shredded mozzarella cheese

Canned Goods and Seasonings

  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil to prevent sticking.
  2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and sauté for about 2 minutes until fragrant and softened.
  3. Cook Turkey: Add the ground turkey to the skillet and cook for 5-6 minutes, breaking it up with a spoon, until it’s thoroughly browned and no longer pink.
  4. Add Tomatoes and Seasonings: Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Let the mixture simmer for 3-4 minutes to blend flavors.
  5. Layer the Casserole: In the prepared baking dish, layer half of the sliced zucchinis. Spread half of the turkey mixture on top, then sprinkle with half of the shredded mozzarella cheese. Repeat the layering with the remaining zucchini, turkey mixture, and mozzarella cheese.
  6. Bake: Place the casserole uncovered in the oven and bake for 30-35 minutes until bubbly and the cheese is golden and melted.
  7. Cool and Serve: Let the casserole cool for 5 minutes before serving to allow it to set slightly for easier slicing.

Notes

  • You can substitute ground chicken or lean beef if desired.
  • For extra flavor, add red pepper flakes during cooking for a mild kick.
  • This casserole can be refrigerated for up to 3 days or frozen for up to 2 months.
  • To reduce sodium, use no-salt-added diced tomatoes and adjust salt to taste.
  • Slicing zucchinis thinly helps them cook fully within the baking time.
