Ingredients

Scale

Beef and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1/4 cup water

Filling

  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Assembly and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling (optional)

Instructions

  1. Cook the Beef: Brown the ground beef in a skillet over medium heat for 8 to 10 minutes until fully cooked. Drain any excess grease. Add the taco seasoning packet and 1/4 cup water to the skillet, then simmer the mixture for 5 minutes until the flavors meld and the sauce thickens slightly.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or briefly in the microwave until they become soft and flexible. This step helps make assembling and folding easier.
  3. Assemble the Burrito: Lay a warmed tortilla flat on a clean surface. Spread a layer of cooked white rice evenly over the tortilla, followed by the seasoned ground beef. Add the nacho cheese sauce and chipotle sauce evenly over the beef. Dollop the sour cream on top, then evenly sprinkle shredded cheddar and mozzarella cheeses over everything.
  4. Grill the Burrito: Heat a clean skillet over medium heat. Sprinkle about 2 tablespoons of shredded cheese onto the pan. Place the assembled burrito seam-side down onto the cheese in the skillet. Cook for 3 to 4 minutes until the cheese melts and forms a crispy, golden crust. Carefully flip the burrito and cook the other side similarly until golden and crispy with melted cheese. Remove from heat and serve immediately.

Notes

  • Use homemade taco seasoning for a fresher and customizable flavor.
  • Adjust chipotle sauce amount based on your preferred spice level.
  • Butter or oil can be added to the skillet for grilling the burrito if you want extra crispiness.
  • Leftover burritos can be wrapped in foil and refrigerated for up to 2 days; reheat in a skillet for best results.
  • For a gluten-free version, substitute flour tortillas with gluten-free tortillas.
