Fudge Base
- 500 grams white chocolate
- 397 grams sweetened condensed milk
- 1 cup brown sugar (loosely packed)
- 50 grams unsalted butter
- 1 tbsp mixed spice (a blend of cinnamon, nutmeg, cloves, and ginger)
Decoration
- Gingerbread Men Sprinkles
- Prepare the Tray: Line a slice tray measuring approximately 28 x 17.5 x 5 cm with baking paper, ensuring there is overhang on the sides to help remove the fudge later.
- Set Slow Cooker Temperature: Turn your slow cooker on to a low temperature, allowing it to gently melt the ingredients without burning.
- Add Ingredients to Cooker: Place white chocolate melts, brown sugar, sweetened condensed milk, and unsalted butter into the slow cooker. Sprinkle the mixed spice evenly over the top of the mixture.
- Cook and Stir: Stir the mixture every 15 minutes over the course of 1 hour to ensure even melting and mixing. This slow and steady process helps create a smooth fudge texture.
- Adjust Heat: After one hour, turn the heat setting to warm—if your slow cooker lacks a warm setting, turn it off and allow residual heat to keep the fudge warm.
- Pour and Flatten: Pour the fudge carefully into the lined slice tray. Hold both ends of the tray and gently tap it to flatten the fudge and remove air bubbles.
- Add Sprinkles: Decorate the top of the fudge with gingerbread men sprinkles to give it a festive, seasonal look.
- Chill to Set: Place the tray in the fridge and chill for at least 2 hours until the fudge is fully set and firm.
- Cut and Serve: Remove the fudge from the fridge. Use the overhanging baking paper to lift it out of the tray. With a sharp knife, cut the fudge into small bite-sized pieces. Serve and enjoy!
Notes
- Note 1: Use high-quality white chocolate for the creamiest texture and best flavor.
- Note 2: Ensure the sweetened condensed milk is fully mixed in by stirring well during cooking to prevent graininess.
- Note 3: Mixed spice is a warming blend of cinnamon, nutmeg, cloves, and ginger—perfect for bringing a gingerbread flavor to the fudge.
- Note 4: Gingerbread men sprinkles add a fun decorative touch and festive charm to the fudge.
