Ingredients

Scale

Wet Ingredients

  • 2 large eggs
  • 3 tablespoons avocado oil (or melted cooled coconut oil, or light olive oil)
  • ¼ cup pure maple syrup
  • 3 ½ tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 ½ cups milk

Dry Ingredients

  • 2 ½ cups gluten free rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • ½ teaspoon sea salt

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375ºF (190ºC) and grease an 8×8 or 9×9 inch baking dish to prevent sticking.
  2. Mix wet ingredients: In a large bowl, whisk together the eggs, avocado oil, pure maple syrup, molasses, vanilla extract, and milk until fully combined and smooth.
  3. Add dry ingredients: Stir in the gluten free rolled oats, baking powder, ground ginger, cinnamon, allspice, cloves, and sea salt into the wet mixture until everything is evenly distributed.
  4. Transfer and bake: Pour the oatmeal mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the center is set when tested with a toothpick.
  5. Serve: You can enjoy the baked oatmeal immediately while it’s warm and soft, bowl style, or allow it to cool for about 20 minutes to firm up and then slice into squares. Optionally, top with melted coconut butter, a lemon glaze, maple syrup, or your favorite yogurt for extra flavor.
