A quick and flavorful stir-fry recipe featuring tender chicken and crisp green beans combined with noodles and a zesty ginger soy sauce for a deliciously balanced meal.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breast, thinly sliced

Vegetables

  • 8 oz fresh green beans, trimmed and sliced into 2-inch pieces
  • 2 tablespoons fresh ginger, minced

Carbohydrates

  • 6 oz dried noodles (such as rice noodles or egg noodles)

Sauces & Seasonings

  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil (for stir-frying)
  • Optional: 1 teaspoon sesame oil for flavor

Instructions

  1. Prepare the noodles: Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. Heat the oil and stir-fry chicken: In a large skillet or wok over medium-high heat, add the vegetable oil. Add the sliced chicken and stir-fry for about 4-5 minutes until cooked through and lightly browned.
  3. Add ginger and green beans: Add the minced ginger and green beans to the skillet with the chicken. Continue to stir-fry for another 3-4 minutes until the green beans are tender-crisp.
  4. Combine noodles and sauce: Add the cooked noodles and soy sauce to the skillet. Toss everything together to ensure the noodles and vegetables are evenly coated with the sauce and heated through. Optionally, drizzle with sesame oil for extra flavor. Serve hot.

Notes

  • For best flavor, use fresh ginger rather than ground ginger.
  • You can substitute green beans with snap peas or asparagus for variation.
  • Adjust soy sauce quantity according to your salt preference.
  • To keep it gluten free, use gluten-free soy sauce and rice noodles.
  • Adding a sprinkle of toasted sesame seeds or chopped scallions makes a nice garnish.
