Chicken
- 2–3 boneless skinless chicken breasts, diced
- ¼ cup BBQ sauce (for marinating)
- 1 tablespoon oil (for cooking)
Rice & Vegetables
- 4 cups cooked jasmine rice (preferably day-old)
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 green onions, chopped
Sauces
- ¼ cup BBQ sauce (to add while stir-frying)
- 2 tablespoons low-sodium soy sauce
- Marinate Chicken: Combine diced chicken breasts with half of the BBQ sauce (¼ cup) and let it sit for at least 15 minutes to absorb the flavors.
- Cook Chicken: Heat a tablespoon of oil in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 6-8 minutes.
- Sauté Vegetables: Add the mixed vegetables to the skillet with the chicken and cook for 3-4 minutes, stirring occasionally, until heated through.
- Add Rice and Sauces: Stir in the cooked jasmine rice along with the remaining ¼ cup BBQ sauce and 2 tablespoons soy sauce. Mix everything well and cook for about 2 minutes to combine the flavors.
- Finish with Green Onions: Sprinkle chopped green onions over the fried rice just before serving and stir lightly to distribute.
Notes
- Using day-old rice helps prevent the fried rice from becoming mushy.
- You can substitute BBQ sauce with teriyaki sauce for a different flavor.
- For added protein, consider mixing in scrambled eggs or tofu for a vegetarian version.
- Adjust soy sauce and BBQ sauce quantities to taste depending on preferred saltiness and sweetness.
- Ensure chicken is cooked thoroughly to an internal temperature of 165°F (74°C).
