Ingredients

Scale

Cookie Dough

  • 10 tablespoons unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

Toppings

  • 12 large marshmallows, cut in half
  • 24 Hershey’s Kisses milk chocolate, unwrapped

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the cookie dough.
  2. Mix Butter and Sugar: In a large bowl, combine the softened butter and granulated sugar. Stir together thoroughly until well combined and creamy.
  3. Add Wet Ingredients: Beat in the eggs, creamy peanut butter, and vanilla extract on medium speed until the mixture is well blended and smooth.
  4. Add Dry Ingredients: Gradually add the all-purpose flour, baking powder, and salt to the wet mixture. Mix until just combined to form the cookie dough.
  5. Form Cookies: Roll the dough into balls about 1 tablespoon each. Place the dough balls onto a baking sheet covered with baking paper, spacing them out evenly.
  6. Bake Cookies: Bake the cookies in the preheated oven for 8-10 minutes, or until the edges begin to develop a slight brown color.
  7. Add Marshmallows: Remove the cookies from the oven. Immediately place half of a marshmallow, sticky side down, on top of each warm cookie.
  8. Broil Marshmallows: Return the cookies to the oven and broil for 1-2 minutes until the marshmallows turn golden brown and toasted. Keep a close eye to prevent burning.
  9. Add Hershey’s Kisses: Take the cookies out and gently press one unwrapped Hershey’s Kiss chocolate on top of each cookie, pressing slightly so the chocolate melts slightly into the warm cookie.
  10. Cool: Transfer the cookies to a wire rack and allow them to cool completely before serving, so the chocolate sets nicely.

Notes

  • Watch the marshmallows carefully when broiling to avoid burning, as they can brown quickly.
  • You can substitute creamy peanut butter with another nut butter if desired, but texture and flavor will vary slightly.
  • For softer cookies, refrigerate the dough for 30 minutes before baking.
  • Make sure the butter is softened but not melted for best mixing results.
  • Use baking paper or a silicone baking mat to prevent cookies from sticking to the sheet.
