Casserole Layers

  • 11 oz Doritos (lightly crushed)
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) and spray a casserole dish or a 13×9 inch baking pan with non-stick spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the cooked shredded chicken, cream of chicken soup, sour cream, diced tomatoes with green chiles, corn kernels, and taco seasoning. Stir well until all ingredients are evenly blended.
  3. Layer the Casserole – First Layer: Spread about one-third of the crushed Doritos evenly across the base of the prepared baking dish. Then spread half of the chicken mixture over the chips, followed by half of the shredded cheddar cheese.
  4. Layer the Casserole – Second Layer: Repeat the layering process with another one-third of the crushed Doritos, the remaining chicken mixture, and the remaining shredded cheddar cheese.
  5. Top with Doritos: Finish by topping the casserole with the remaining Doritos, spreading them evenly.
  6. Bake: Place the casserole in the preheated oven and bake uncovered for 30-35 minutes or until hot and bubbly. If the Doritos start to brown too quickly, lightly cover the casserole with aluminum foil to prevent burning.
  7. Serve: Remove the casserole from the oven and serve warm with your favorite taco toppings such as sour cream, guacamole, salsa, or chopped cilantro.
