  • ½ cup soy sauce
  • 3 cloves garlic (minced)

  • 2 cups chicken broth

  • 2 pounds boneless skinless chicken breast or thighs
  • 1 cup shredded carrots
  • 1 red bell pepper (sliced)
  • ¼ cup chopped green onions (about 34 stalks)
  • 2 packs chicken flavor ramen noodles (seasoning packet discarded)

Instructions

  1. Prepare the Sauce and Broth: Whisk together the soy sauce, minced garlic, minced ginger, brown sugar, sriracha, and chicken broth in the bottom of the slow cooker until well combined.
  2. Add Chicken and Vegetables: Lay the boneless, skinless chicken breasts or thighs into the mixture in the slow cooker. Then top the chicken with shredded carrots, sliced red bell pepper, and chopped green onions.
  3. Cook the Chicken: Cover the slow cooker and cook on high for 2.5 to 3 hours, or on low for 3 to 4 hours, until the chicken is fully cooked and tender.
  4. Shred Chicken and Add Noodles: Once cooked, remove the chicken from the slow cooker and shred it using two forks. Add the uncooked ramen noodles directly into the broth in the slow cooker. Place the shredded chicken back on top of the noodles, cover, and let sit for 15 to 20 minutes to allow the noodles to soften.
  5. Mix and Serve: Stir the shredded chicken, softened ramen noodles, and sauce together until evenly combined. Serve the ramen in bowls and garnish with additional green onions, sesame seeds, or extra sauce as desired.

  • You can use either chicken breasts or thighs depending on your preference; thighs tend to be juicier.
