Instructions

  1. Prepare the meat: Brown the ground beef in a skillet over medium heat until fully cooked and no longer pink. Drain excess fat to keep the soup from being greasy.
  2. Combine main ingredients: In your slow cooker, add the browned ground beef, diced potatoes, carrots, celery, onion, salt, pepper, dried basil, garlic powder, and chicken broth. Do not add the Velveeta or cream cheese yet.
  3. Slow cook the base: Cover the slow cooker and cook on LOW for 7 hours without opening the lid to maintain temperature and moisture. Alternatively, you can cook on HIGH for 3-4 hours until the potatoes are tender.
  4. Add the cheeses: Cut the Velveeta and cream cheese into cubes and add them to the slow cooker. Stir gently to help distribute the cheese evenly though it will not melt immediately.
  5. Final cooking: Cover and cook on LOW for an additional 1 hour, allowing the cheeses to fully melt and blend into the soup creating a creamy texture.
