Ingredients

Scale

Vegetables & Dairy

  • 1 ½ cups Canned or Frozen Corn (approximately 1 can or equivalent amount of frozen kernels)
  • 1 cup Shredded Cheddar Cheese (about 4 ounces)
  • ½ cup Shredded Mozzarella Cheese (about 2 ounces)
  • 1 Large Egg (at room temperature)

Dry Ingredients & Spices

  • ½ cup All-Purpose Flour (approximately 60 grams)
  • ¼ cup Breadcrumbs (approximately 20 grams)
  • 1 teaspoon Garlic Powder (approximately 3 grams)
  • ½ teaspoon Onion Powder (approximately 1.5 grams)
  • ½ teaspoon Paprika (approximately 1.5 grams)
  • ¼ teaspoon Salt (approximately 1 gram)
  • ⅛ teaspoon Black Pepper (approximately 0.5 grams)

Oils

  • Vegetable Oil or Canola Oil (enough for deep or shallow frying)

Instructions

  1. Prepare the Corn: Drain canned corn thoroughly or thaw frozen corn completely and pat dry to remove excess moisture which prevents sogginess and helps the bites hold their shape.
  2. Combine Wet Ingredients: Crack the egg in a large mixing bowl and whisk lightly to ensure even incorporation in the mixture.
  3. Mix Dry Ingredients and Cheese: Add all-purpose flour, shredded cheddar, shredded mozzarella, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper to the bowl with the egg.
  4. Incorporate the Corn: Add the prepared corn kernels to the mixture of cheese and spices in the bowl.
  5. Mix Thoroughly: Stir all ingredients together until fully combined, ensuring an even distribution of corn, cheese, and spices. The mixture should be thick and slightly sticky.
  6. Form the Bites: Scoop about a tablespoon of mixture and shape into small balls or flattened discs. Repeat to make approximately 20-25 bites.
  7. Prepare for Frying or Baking: For frying, heat vegetable or canola oil in a deep pan to 350-375°F (175-190°C). For baking, preheat oven to 400°F (200°C), line a baking sheet with parchment, and lightly oil the sheet.
  8. Cook the Bites: Fry a few bites at a time in hot oil without overcrowding for 2-3 minutes per side or until golden and crispy. Alternatively, bake the bites on the prepared sheet for 15-20 minutes, flipping halfway, until golden brown and heated through.
  9. Drain Excess Oil (Frying only): Remove fried bites with a slotted spoon and place on paper towels to drain excess oil.
  10. Cool Slightly and Serve: Let the bites cool briefly so the cheese sets slightly but remains gooey, then serve warm with your preferred dipping sauces.

Notes

  • Ensure corn is completely dry to avoid soggy bites.
  • Use low-moisture mozzarella for better texture and browning.
  • Panko breadcrumbs can be used in the coating for extra crunch.
  • You can substitute all-purpose flour with gluten-free flour if needed.
  • Baking is a healthier alternative to frying without sacrificing much on texture.
  • Adjust salt according to the saltiness of the cheese used.
