Banana Custard Ingredients

Instructions

  1. Prepare the Bananas and Milk Mixture: Peel and mash the bananas until no large chunks remain. Place them in a large saucepan, add the whole milk and vanilla bean paste or extract. Heat over medium heat, stirring to combine until the mixture begins to bubble. Remove from heat and allow to cool for about 10 minutes.
  2. Whisk Egg Yolks Mixture: In a large bowl, whisk together the egg yolks, granulated sugar, and cornstarch vigorously until the mixture becomes lighter in color and fluffy, approximately 2 minutes.
  3. Combine Mixtures: Slowly pour the cooled milk and banana mixture into the egg yolk mixture while whisking constantly, pouring down the side of the bowl to prevent curdling. Whisk until evenly combined.
  4. Cook Custard: Return the combined mixture to the large saucepan and place over low to medium heat. Continuously whisk as the mixture heats. Cook until it thickens and bubbles, achieving a pudding-like consistency. Remove from heat.
  5. Add Butter and Seasoning: Stir in the butter and salt, whisking until the butter has completely melted and is well incorporated.
