Stew Base
- 3 Tbsp vegan butter
- 1 medium onion, diced
- 1 lb mushrooms, sliced
- 4 cloves garlic, minced
- 2 (15 oz.) cans white beans, drained and rinsed
- 1 lb baby potatoes, cut into cubes
- 3 cups vegetable broth
- 2 cups dairy-free milk (such as almond or oat milk)
Seasonings and Garnish
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 Tbsp cornstarch
- 1 Tbsp tamari (or soy sauce)
- Fresh parsley, chopped, for garnish
- Sauté Onion: Heat the vegan butter in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Cook Mushrooms & Herbs: Add the sliced mushrooms, dried thyme, rosemary, salt, and pepper. Cook until the mushrooms are browned and have released their moisture, about 7-8 minutes.
- Add Garlic and Cornstarch: Stir in the minced garlic and cornstarch, mixing well to coat the mushrooms and onions evenly. Cook for an additional 1-2 minutes to bloom the cornstarch.
- Add Liquids and Potatoes: Pour in the tamari and vegetable broth, then add the cubed baby potatoes. Increase the heat and bring the mixture to a boil.
- Simmer Potatoes: Reduce heat to low and simmer uncovered for 15-20 minutes or until the potatoes are tender when pierced with a fork.
- Finish with Beans and Dairy-Free Milk: Stir in the drained white beans and dairy-free milk. Continue to simmer gently until the stew thickens slightly, about 5 more minutes.
- Serve: Ladle the stew into bowls and garnish with freshly chopped parsley. Serve warm and enjoy your cozy meal!
Notes
- You can use any variety of mushrooms like cremini, button, or shiitake for different flavors.
- For extra thickness, add a bit more cornstarch mixed with water before the final simmer.
- Use gluten-free tamari to keep the recipe gluten-free.
- Dairy-free milk alternatives such as oat, almond, or soy milk work well; avoid flavored or sweetened varieties.
- Make sure to rinse the canned white beans to reduce sodium content.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- This stew freezes well; thaw and reheat gently on the stove.
