Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C). Line a half sheet pan (18 x 13 inches) with enough parchment paper to cover the bottom and edges, then spray the parchment lightly with cooking oil to prevent sticking and help the flatbread release easily later.
  2. Blend Ingredients: Place the cottage cheese and eggs into a food processor or blender. If using any seasonings or additional cheeses, add them now. Blend the mixture until it is smooth and well combined.
  3. Spread Mixture: Pour the blended mixture onto the prepared sheet pan and use a spatula to spread it out evenly, leaving about a ½ inch border from the edge. Try to keep the edges as straight as possible for a rectangular shape.
  4. Bake: Bake the flatbread for 35-40 minutes or until the surface develops a golden brown color. Because the flatbread is moist, it is okay to bake it a little longer to get a nice crust.
  5. Cool: Allow the flatbread to cool completely in the pan before removing it to prevent breaking. Once cooled, gently peel or roll the flatbread off the parchment paper.
  6. Slice and Store: Cut the flatbread in half to make two large flatbreads suitable for sandwiches, or quarter it for smaller sandwich portions. Store any leftovers in the fridge for freshness.
