Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1 cup whole milk cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Cheese and Fillings

  • 1/2 cup grated cheese (your choice, e.g., cheddar, mozzarella, or Swiss)
  • Optional: Up to 1 cup chopped vegetables or meats (e.g., spinach, bell peppers, mushrooms, ham, or bacon)

Instructions

  1. Preheat the oven. Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for even baking.
  2. Prepare baking dish. Lightly spray a 9-inch baking dish with oil or non-stick spray to prevent sticking and make cleanup easier.
  3. Blend egg mixture. In a blender or food processor, combine the 6 large eggs, 1 cup whole milk cottage cheese, 1/4 tsp salt, and 1/4 tsp ground black pepper. Blend until the mixture is smooth and creamy to ensure a uniform texture.
  4. Add fillings. Pour the blended mixture into a bowl and gently stir in 1/2 cup grated cheese along with any optional chopped vegetables or meats of your choice, up to 1 cup total.
  5. Pour and bake. Pour the mixture evenly into the prepared baking dish and place it in the preheated oven. Bake for about 45 minutes, or until the quiche is set in the middle and the top turns golden brown.
  6. Cool and serve. Once baked, remove the quiche from the oven and let it cool slightly for 5-10 minutes before slicing. This helps it firm up for easier serving.

Notes

  • You can customize your quiche with various vegetables like spinach, mushrooms, or bell peppers, and meats like ham or bacon for added flavor.
  • Use a blender for a smoother texture or mix ingredients by hand for a chunkier consistency.
  • Allow the quiche to cool slightly before slicing to help it hold its shape better.
  • This recipe is gluten-free since it contains no pastry crust.
  • To reduce fat content, use low-fat or non-fat cottage cheese and cheese varieties.
