Instructions

  1. Cook the Carrots: Heat the olive oil in a frying pan over medium heat, then reduce to low and add the carrot pieces along with oregano, paprika, salt, rosemary, and thyme sprigs. Cover the pan with a lid and cook gently until the carrots are tender, adding a splash of water if needed. Once soft, stir in the hot honey, then remove from heat and set aside.
  2. Toast the Pumpkin Seeds: In the same pan, add the pumpkin seeds and toast them on medium heat until they begin to pop and turn golden brown. Remove from the pan and set aside.
  3. Toast the Bread: Using the same pan without washing it, toast the slices of whole grain bread on both sides until they are crisp and golden brown.
  4. Assemble the Toast: Spread a generous layer of cottage cheese over each toasted bread slice. Top with the honey-glazed carrots, sprinkle with the toasted pumpkin seeds, and finish by garnishing with chopped fresh parsley. Drizzle additional hot honey over the top if desired for extra flavor.
