Ingredients

Scale

Beef Mixture

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Vegetables & Base

  • 3 cups cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup cooked rice
  • ½ cup beef broth

Topping

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prepare for layering and baking the casserole.
  2. Cook the beef: In a skillet over medium heat, brown the ground beef and chopped onion until fully cooked. Drain any excess fat, then stir in garlic powder, salt, and black pepper to season the meat evenly.
  3. Layer the casserole: Spread half of the chopped cabbage evenly in the bottom of the prepared baking dish. Next, distribute the cooked beef mixture evenly over the cabbage layer. Sprinkle the cooked rice on top, then pour the diced tomatoes with their juices over everything. Add the remaining cabbage as the final layer and pour the beef broth evenly over the entire dish.
  4. Bake covered: Cover the baking dish with foil to retain moisture and bake in the preheated oven for 45 minutes, allowing the flavors to meld and the cabbage to soften.
  5. Add cheese & finish baking: Remove the foil carefully, sprinkle the shredded cheddar cheese evenly over the casserole, and return it to the oven uncovered. Bake for an additional 10-15 minutes until the cheese is melted, bubbly, and golden.
  6. Cool & serve: Let the casserole rest for 5 minutes after baking to set slightly. Serve warm and enjoy this satisfying meal.

Notes

  • You can substitute ground beef with ground turkey for a leaner option.
  • For added flavor, consider adding a pinch of smoked paprika or chili flakes to the beef mixture.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently in the oven or microwave.
  • Adding a layer of sliced mushrooms with the cabbage can enhance texture and taste.
  • This dish pairs well with a simple green salad or steamed vegetables for a balanced meal.
