Base
- 12 graham crackers, broken in half
Peanut Butter Mixture
- 1 1/2 cups creamy peanut butter
- 1/2 cup butter (1 stick), softened
- 2 1/2 cups powdered sugar
- 1 tsp vanilla extract
Chocolate Coating
- 3 1/2 cups semi-sweet chocolate chips
- 3 tbsp vegetable oil
Peanut Butter Drizzle
- 1 cup peanut butter chips
- 1 tbsp vegetable oil
- Prepare Graham Crackers: Break each graham cracker sheet in half to create squares. Arrange the graham cracker squares on a baking sheet lined with parchment paper and set aside.
- Make Peanut Butter Mixture: In a large mixing bowl, combine creamy peanut butter, softened butter, powdered sugar, and vanilla extract. Mix thoroughly until the mixture is smooth and well blended.
- Form Peanut Butter Balls: Roll the peanut butter mixture into 1-inch sized balls. Place one ball on top of each graham cracker square.
- Flatten Peanut Butter: Gently flatten each peanut butter ball onto the surface of its graham cracker, spreading the mixture evenly to the edges for full coverage.
- Melt Chocolate Coating: In a microwave-safe bowl, combine semi-sweet chocolate chips with 3 tablespoons of vegetable oil. Microwave in 30-second intervals, stirring after each, until the chocolate is completely melted and smooth.
- Coat Graham Crackers: Dip or coat each peanut butter topped graham cracker with the melted chocolate. Allow excess chocolate to drip off, then place them back on the lined baking sheet.
- Prepare Peanut Butter Drizzle: In a separate microwave-safe bowl, combine peanut butter chips with 1 tablespoon of vegetable oil. Microwave in 30-second intervals, stirring until smooth and melted.
- Drizzle and Chill: Drizzle the melted peanut butter chips over each chocolate-coated graham cracker. Transfer the baking sheet to the refrigerator and chill until the chocolate has fully set before serving.
Notes
- Use parchment paper or a silicone mat on your baking sheet to prevent sticking and make cleanup easier.
- Peanut butter should be creamy for best texture and spreading consistency.
- Ensure the butter is softened and at room temperature for easier mixing.
- Microwave timing may vary; watch carefully to avoid burning chocolate or peanut butter chips.
- Store finished Buckeye Graham Crackers in an airtight container in the refrigerator to keep them firm and fresh.
- For a nut-free version, substitute peanut butter with a nut-free butter and use allergy-safe chips.
