- Prepare the Lemon: Wash and dry one whole lemon thoroughly. Using a zester or fine grater, zest the entire peel to capture the flavorful oils. Then cut the lemon in half and squeeze the juice from one half, reserving the other half for optional juice adjustments.
- Add Ingredients to Blender: Place the almond milk in a high-speed blender first to help the blending process. Then add blueberries, avocado chunks, Greek yogurt, vanilla extract, cinnamon, chia seeds, lemon zest, and the juice of half a lemon. Add the optional protein or collagen powder if using.
- Blend Until Smooth: Blend all ingredients on high until the mixture is completely smooth and creamy. Stop to scrape down the sides if needed. Adjust the consistency by adding more almond milk if it is too thick or some ice if it’s not cold enough.
