Instructions

  1. Prepare the carrots: Cook the carrots until soft by boiling or steaming, then mash or puree them until smooth to incorporate easily into the dough.
  2. Prepare the blueberries: If using frozen blueberries, allow them to thaw slightly and then blend into a smooth puree to evenly distribute flavor and color.
  3. Make the carrot dough: In one bowl, mix half the oat flour, the carrot puree, and half of the beaten egg to form an orange dough. Add cinnamon and coconut oil if using and adjust consistency with a splash of water as needed to form a pliable dough.
  4. Make the blueberry dough: In a separate bowl, combine the remaining oat flour, blueberry puree, and remaining egg to create a purple dough, incorporating optional cinnamon and coconut oil as well. Adjust with water if necessary for proper consistency.
  5. Form the twists: Roll out strips from both colored doughs to an even thickness. Twist one carrot dough strip together with one blueberry dough strip securely to form twisted ropes.
  6. Bake the twists: Preheat the oven to 350°F (175°C). Place the twisted strips on a lined baking sheet and bake for 25 to 30 minutes until the twists are firm and golden brown.
