Ingredients

Scale

For the Eggs

  • 6 large eggs
  • 1 tbsp. mayonnaise
  • 1½ tsp. spicy brown deli mustard
  • 1 tsp. sour cream
  • Salt & pepper, to taste

For Decoration

  • 1 large red bell pepper

Instructions

  1. Boil the eggs: Place 6 large eggs in a pot and cover with cool water. Bring to a boil over medium-high heat and cook for 20 minutes to hard boil.
  2. Cool the eggs: Transfer boiled eggs to a bowl of cold water and let sit 5-10 minutes to cool completely.
  3. Peel the eggs: Gently tap and crack the shells around the center, then carefully peel away the shell without damaging the egg.
  4. Slice the eggs: Slice each egg through the middle widthwise to create sturdy halves that sit flat.
  5. Remove yolks: Carefully remove the yolks from the egg whites, placing yolks into a mixing bowl.
  6. Trim egg bottoms: Slice a small bit off the bottom of each egg white half so they sit flat and stable on the serving plate.
  7. Prepare yolk filling: Push the yolks through a mesh strainer to break them up and create a smooth texture.
  8. Mix filling: In a bowl, combine the strained yolks with 1 tbsp. mayo, 1 tsp. sour cream, 1½ tsp. spicy brown deli mustard, and salt and pepper to taste. Mix until smooth and creamy.
  9. Refrigerate filling: Cover the filling with plastic wrap and refrigerate while preparing decorations.
  10. Prepare decorations: Slice the large red bell pepper into shapes resembling horns and wings to place atop each deviled egg for a Halloween theme.
  11. Assemble deviled eggs: Spoon or pipe the yolk mixture into the egg whites, then adorn with bell pepper shapes to complete the Halloween look. Serve chilled.

Notes

  • Boiling eggs for 20 minutes ensures fully hard-boiled yolks suitable for smooth deviled filling.
  • Straining yolks through a mesh strainer guarantees creamy, lump-free filling.
  • Cutting a small slice off the egg white bottoms helps keep eggs from rolling on the plate.
  • Use bell pepper decorations to add a fun, festive Halloween touch.
  • The recipe can be customized with different mustards or toppings according to taste.
